Caramelized onion and chicken quiche

Ingredients

  • 1 Ready to make pie crust
  • 6 Large eggs
  • 1/2 A cup heavy cream
  • 1/2 A cup shredded pepper jack cheese
  • Salt and pepper to taste
  • A pinch of Cayenne pepper (optional for a pinch of heat)
  • 1/2 tsp Onion powder
  • 1 Cup fresh spinach chopped
  • 1/2 A lb ground chicken
  • 1 Large white onion

`Preheat your oven to 375F (190C)

Remove your pie crust from the freezer and let it thaw. Alternatively, you can follow the instructions on the packaging for quick thawing methods.

Peel and slice white onion into small thin slices. Heat the oil in a non-stick skillet or saucepan and add the sliced onions.

Cook the onions on medium for 20-30 minutes stirring every 5 minutes until they brown. Keep a close eye on the onions to avoid burning.

Remove from heat once done, and set aside.

In a skillet over medium heat, add the ground chicken and season with salt, pepper and onion powder. Cook until slightly browned, stirring occasionally. Set it aside to cool.

In a mixing bowl, whisk together the eggs, heavy cream, salt, pepper and cayenne (if using). Mix until well combined.

Carefully pour the egg mixture over the fillings in the pie crust, making sure everything is evenly cooked.

Place the quiche in the preheated oven and bake for approximately 30 to 35 minutes or until the center is set and the top is golden brown.

Once the quiche is done baking, remove it from the oven and let it cool slightly before slicing and serving.

Spread the ground chicken evenly over the bottom of the pie crust. Next add the caramelized onions and chopped spinach. Sprinkle the pepper jack cheese on top.

Pair it with a green salad for a delightful meal.
