South African Soft Porridge in a bowl served with butter and sugar

How to make South African Soft Porridge – Just like home

1. More than just breakfast

I distinctly remember having a warm bowl of soft porridge on a cold winter day before school, which my grandmother used to make. There was an abundance of love and comfort in that bowl. The mixture of butter and sugar in soft porridge melts in your mouth. It’s delicious, nostalgic, and tradition in most South African homes.

Mieliepap is so easy to make; you need 4 simple ingredients that we’ll get into in a moment. It’s a beginner-friendly recipe. All you need is time and patience.

2. What is South African Soft Porridge?

What we call “pap” and why it matters

Soft porridge or mieliepap is a smooth and creamy corn porridge made from finely ground maize meal. It’s like grits but softer and smoother. It’s made by cooking maize meal with water or milk until it’s thick but pourable, and it’s a staple food in South Africa.

There’s a difference between:

  • Soft porridge
  • Stiff pap
  • Crumbly pap

They are all maize meal-based; the difference comes down to how it’s cooked, and that changes the texture and how it’s eaten.  Soft porridge is smooth and creamy, and usually sweet. Stiff pap is thick and firm, it’s cooked until dense, always savory, and crumbly pap is dry and fluffy.

Soft porridge is normally served during breakfast, specifically on cold days. Another brunch meal you have to try is avocado toast.

3. Ingredients you’ll need (and why simplicity is key)

Simple Ingredients, done right

  • Maize meal

  • Optional add-ins:
  • Milk
  • Butter
  • Sugar
  • Honey

4. How to make South African Soft Porridge

How to make soft porridge without lumps

  1. Bring water and milk to a boil
  2. Mix maize meal, vanilla essence, and milk in a bowl
  3. Slowly add the mixture to the boiling water and milk
  4. Stir to prevent sticking until it thickens
  5. Add sugar and butter
  6. Cook until smooth and creamy

It’s important to cook soft porridge on low heat because if you rush the cooking process, it will very quickly turn into stiff pap. Adjust the thickness to your liking, but make sure to keep an eye on it. The mieliepap doesn’t have to be perfect; it’s really more about your personal preference.
